🍰 Grandma's vanilla cake – Deliciously light and easy

Nothing beats the smell of a freshly baked vanilla cake! 🍰

With this traditional recipe from Grandma, you can make a delicious, soft and light cake with simple ingredients that you probably already have at home.

You can prepare the cake in two ways: the classic way with a hand mixer or extra easily with a KitchenAid or other stand mixer.

🧈 Ingredients

  • 4 eggs
  • 250 g self-rising flour
  • 137 g Solo (baking margarine)
  • 200 g sugar
  • 1 packet of vanilla sugar

🥣 Method 1 – Traditional with a hand mixer

Step 1 – Separate the eggs

Separate the 4 eggs and put the egg yolks and egg whites in separate bowls.

Step 2 – Make the batter

Mix the Solo, sugar, vanilla sugar and egg yolks with the hand mixer until light and fluffy.

Step 3 – Add the flour

Gradually add the self-rising flour and mix until you have a smooth batter.

Step 4 – Beat the egg whites

Beat the egg whites in a separate, grease-free bowl until stiff.

Step 5 – Mix carefully

Gently fold the beaten egg whites into the batter. This preserves the lightness and gives the cake its soft texture.

Step 6 – Fill the baking tin

Pour the batter into a greased cake tin and smooth the top.

⚙️ Method 2 – With a KitchenAid or stand mixer

With a stand mixer, you can make the same delicious cake batter without having to separate the eggs.

Step 1 – Beat the eggs and sugar until light and fluffy

Put the 4 whole eggs, 200 g sugar and the packet of vanilla sugar together in the mixing bowl.

Beat everything thoroughly until light and fluffy.

Step 2 – Add the remaining ingredients

Next, add the 137 g Solo and 250 g self-rising flour.

Step 3 – Mix the batter

Mix everything until you have a smooth, even cake batter. Do not mix longer than necessary.

Step 4 – Fill the baking tin

Pour the batter into a greased cake tin and spread it evenly.

🔥 Baking time and temperature

The same oven settings apply to both methods:

  • Temperature: 170°C
  • Baking time: 50 minutes
  • Oven: preheated

Place the cake in the oven and let it bake gently.

Towards the end of the baking time, check with a wooden skewer to see if the cake is done. If the skewer comes out dry, the cake is ready.

Let the cake cool slightly before carefully removing it from the tin.

The exact baking time may vary slightly depending on your oven and the baking tin used.

💡 Tips for a successful vanilla cake

  • Use room-temperature ingredients for a smooth, even batter.
  • Do not open the oven door too early, or the cake may sink.
  • Are you using a silicone baking tin? Place it on a sturdy baking tray or rack for extra support.
  • Let the cake cool sufficiently before slicing it.

❤️ Enjoy just like in the old days

This classic vanilla cake is delicious with a cup of coffee or tea, as an afternoon treat, or simply as something tasty to enjoy.

Serve it plain, with a little powdered sugar, or decorate it festively with chocolate.

Happy baking and enjoy! 🍰
